Pumpkin Spice Latte Muffins

Autumn Latte Flavor

With fall in the air the days are getting undeniably shorter. It is harder and harder to get out of bed in the morning while it is still dark outside. The cooler temperatures and the frequent fall drizzle leave me feeling foggy in the morning hours.

These inevitable seasonal realities call me toward the local coffee shop. There I find tempting autumn flavors combined in a variety of caffeinated beverages. The warmth of the cozy space along with the aroma of coffee and the variety of spices fills my senses, urging me to wake up and reminding me of the joys of the season.

After some consideration I order a Pumpkin Spice Latte. It is probably the only one I will drink this year. I enjoy an autumn latte as a seasonal rite of passage. All the same, I generally prefer to stick to coffee-flavored coffee for my morning pick me up.

For the most part, I prefer my coffee black. That said, I do enjoy something sweet on the side. And, while rarely tempted by a Pumpkin Spice Latte, I still feel the attraction of that seasonally rich pumpkin spice flavor blend. If those warm sweet spices were incorporated in a muffin I could enjoy with my coffee, I’m sure I would be much more likely to indulge throughout the season.

A Little Latte in a Pumpkin Spice Muffin

A little cinnamon, some nutmeg and allspice, a hint of orange and, maybe, a dash of cayenne in a small circle of cake sounds warm and wonderful. Fortunately, those are exactly the spices blended by the folks at World Spice Merchants in their flavorful Pumpkin Pie Spice. Even better, I have a jar of it in my spice drawer. A few teaspoons added to a favorite muffin recipe along with a shot of espresso – that would definitely hold my attention.

That thought inspired a bit of improvisation. These muffins are a simple riff on Java Monkey Muffins. Here I include pumpkin instead of bananas and skip the dried coconut. Instead of coconut milk, I use a bottle of flavored iced coffee (you can substitute coffee and milk if you prefer.) Then I add several teaspoons of that amazing Pumpkin Pie Spice blend. Before long I am pulling a tin filled with warm and fragrant Pumpkin Spice Latte Muffins from the oven.

To make these muffins even more special I add a sweet little drizzle of Spiced Latte Glaze to the tops. It includes more Pumpkin Pie Spice and also adds a powerful pinch of espresso powder. Drizzled on top, the glaze provides a thoughtful finish and layers the impact of the Pumpkin Spice Latte flavor.

Pumpkin Spice Latte Muffins

Soft and luscious, these muffins and are made with wholesome oatmeal and mashed pumpkin. Tasty, nutritious and brimming with fall flavor, they make a terrific, and seasonally sensitive, breakfast treat.

Ingredients

  • Muffins:
  • 1 cup old fashioned oats, uncooked

  • 1 cup bottled latte beverage (or 1⁄2 cup coffee + 1 teaspoon espresso powder + 1⁄2 cup milk)

  • 2 egg whites, lightly beaten

  • 2 Tablespoons butter, melted

  • 1⁄2 cup pumpkin puree

  • 1 teaspoon vanilla

  • 1 cup flour

  • 3 Tablespoons sugar

  • 1 teaspoon baking powder

  • 1⁄2 teaspoon baking soda

  • 1⁄4 teaspoon salt

  • 2 teaspoons pumpkin pie spice

  • Spiced Latte Glaze:
  • 1 teaspoon espresso powder

  • 1 1⁄2 Tablespoons hot water

  • 1⁄4 teaspoon vanilla

  • 1⁄2 -1 teaspoon pumpkin pie spice

  • 1 cup confectioners’ sugar

Directions

  • Muffins:
  • Preheat oven to 400F. Lightly spray 12 muffin cups with cooking spray.
  • Mix oats and coffee drink in a medium bowl. Let stand 10 minutes.
  • Add egg whites, butter, pumpkin and vanilla mixing until well blended.
  • Combine flour, sugar, baking powder, baking soda, salt and pumpkin pie spice in a large bowl and mix well.
  • Stir dry ingredients into the pumpkin mixture, just until moistened.
  • Fill muffin cups nearly full. Bake 20-25 minutes at 400F or until golden brown. Cool muffins in tins on a wire rack. After 5 minutes remove from pan. Drizzle with Pumpkin Spice Latte Glaze.
  • Pumpkin Spice Latte Glaze:
  • Dissolve the espresso powder in the hot water. Add 1⁄4 teaspoon vanilla and mix gently.
  • In a small bowl, stir together the pumpkin pie spice and the confectioners’ sugar. Stir 1 Tablespoon of the espresso mixture into the sugar mixture. Add more of the espresso mixture, one teaspoon at a time, until it is a nice consistency for a glaze.
  • When thoroughly mixed and smooth, drizzle glaze from a spoon over cooled muffins.
    Or… put the glaze in a quart-sized ziplock bag, seal the bag, snip off 1⁄4 inch of a lower corner, and squeeze the glaze in a random pattern over the muffins.

  4. Pam – I have never tasted Yoo Hoo. My brother tells me it is similar to Choc-ola but tastes a little different. Funny that an innovative new energy drink would strike a retro chord. Of course, in a sense, that makes it all the more charming.
