Another Year In My Own Sweet Thyme
I’m told on good authority, the new year is here. It arrived all bright and shiny well over a week ago now. And where am I? Running behind the mainstream, as usual; getting there in my own sweet time.
I must confess – I am a slow starter most every January. I can rarely even blame an exuberant New Year’s Eve celebration as the cause. That’s just the way I approach new things; watchfully, with guarded curiosity.
Like most every new year, this one found me pausing to sweep out the old before I jump headlong into the new. To me, early January is a great time to sort through the excesses of the season past. As I take my time to put things in order, I also collect items to discard and donate. Every new year I find myself once again eager to lighten my load in the pursuit of simplicity. It feels like a natural part of this annual stage of renewal.
Pan Roasted Asparagus
Stirring a pot of Black-eyed Peas on New Year’s Day I began to shift my focus from rich menus and pretty confections to simple ingredients, simply prepared. It feels good to choose a few vegetables at the market, wash them, trim them and, without further complication, apply heat to bring out their natural goodness.
This Roasted Asparagus is an example. It is uniquely pretty, nutritious, and so easy to prepare. A splash of oil, a little salt and pepper and a hot oven is all that’s needed to dress it for dinner. It can scarcely get any simpler than this.

Ingredients
1 pound asparagus spears, more or less
1 Tablespoon olive oil
salt and black pepper
Directions
- Preheat oven to 400F.
- Wash and trim asparagus.
- Drain asparagus spears and pat dry. Arrange on a baking sheet. Drizzle them with the olive oil turning until they are completely coated with the oil. Sprinkle with a little salt and pepper.
- Place asparagus in the oven and roast at 400F for 15 – 20 minutes, or until tender.
- Remove from the oven and transfer asparagus spears to a serving platter.
- Enjoy!
Notes
- If you feel inspired to dress this up just a little you might like to drizzle on a few drops of sesame oil, a quick squeeze of lemon juice, or a dusting of grated parmesan cheese.
